Frenchologie Recipes: DIABOLO MENTHE

Hey! It's the weekend again somehow and what are you up to? Today, Frenchologie will share a typical and traditional French soft drink called, 'diabolo menthe' which is also known as Peppermint Soda - the ever popular bright green drink, especially loved by children. The peppermint soda recipe has very simple ingredients that create a really fresh and minty taste.

Ingredients

  • 1 cup loosely packed mint leaves, washed
  • 1/3 cup raw sugar
  • 1 cup water
  • Ice
  • Club Soda / Seltzer Water
  • Mint sprigs for garnish

Instructions
  1. To make the syrup: In a small saucepan over medium heat, place mint leaves, sugar and water. Stir to dissolve. Bring to a simmer, watching carefully to keep mixture from boiling. As soon as steam and a few bubbles appear, remove from heat, cover and steep 30 minutes. Strain into a small pitcher, jar or bowl. Discard leaves and chill mint syrup.
  2. To make the soda: Place ice in a tall glass. Add 1/4 cup cooled mint syrup and top off with club soda/ seltzer water. Stir gently to combine, garnish with mint sprigs and serve.
  3. Syrup can be refrigerated in a covered container up to 1 week.

Of course with such fancy drink should not go without an good old film, coincidentally heres a French film from 1977 also called 'diabolo menthe'.
