Ingredients:
Serves 3-4
- 6-8 Figs cut into 1/8.
- Half a large Butternut Squash
- Rapeseed oil
- Salt
- Pepper
- Paprika
- Garlic granules
- Soft or hard goats cheese (i use whichever is in my fridge at the time!)
- Mixed salad (Rocket, spinach, watercress, lettuce)
- Toasted Pine nuts.
- Squeeze of lemon.
Method:
- Pre-heat the oven at 180degrees.
- Peel and chop the butter nut squash into bite size squares. Cover generously with the oil, salt, pepper, paprika and garlic granules then pop in the oven for 25-30mins.
- When the squash is nearly done prep the figs and goats cheese by chopping to your desired size. I like to cut my figs into little wedges. If i have hard goats cheese i will use a potato peeler to create soft swirls, and if its soft then cubes work best.
- Layer up! I start with any green leaves at the bottom, layer over the butternut squash, the cheese on top of that (as it melts a little which is delicious!) then the figs. I like to add a sprinkling of pine nuts and a good squeeze of lemon but thats optional!
- Feel smug about your pretty salad (instagram it) and demolish!
