Homemade Crêpes

Good afternoon everyone, how is your weekend going so far? I hope it is nice and relaxing and filled with good food and friends. This morning I had the most wonderful day potting in the kitchen whipping up the most delicious crêpes for breakfast. I promise this recipe will quickly become your go to recipe, it's wonderfully simple and beyond delicious. You can also eat it with a generous scoop of vanilla ice cream or fresh berries - très délicieux! 



Ingredients
  • 1 cup plain flour
  • 1 cup milk
  • a pinch of sugar
  • a pinch of salt
  • 2 eggs
  • melted butter, for frying
Method
  1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  2. Heat a frying pan and brush with some melted butter over medium high heat. Pour or scoop the batter onto the frying pan, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
